Oatmeal White Chocolate Chip Cookies




Ingredients:

2 1/2 sticks unsalted butter, softened
1 1/4 cups granulated sugar
3/4 cup dark brown sugar
2 eggs
1 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla
3 cups oatmeal
2 cups white chocolate chips (I prefer the mini chips)

Preheat oven to 350
In bowl of mixer, cream butter and sugars until fluffy.  Add eggs and vanilla, and beat at low speed until combined.
Whisk together flour, cinnamon, baking soda, and salt.  Combine in mixer with butter and eggs.
Slowly beat in oatmeal and white chocolate chips until combined.

Scoop onto cookie sheets, leaving enough space for spreading.  Approximately 12 per sheet.
Bake for 10 minutes, let cool for 1 minute on cookie sheet, and transfer to cooling racks.

This is a thin, crisp cookie, that is chewy at the center.  A really nice change from the traditional raisins.
