Banana Cake



Easy Banana Cake with Maple Cream Cheese Icing



Ingredients:

3 very ripe bananas
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp kosher salt
1 stick unsalted butter
3/4 cup dark brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla

Preheat oven to 350 degrees
spray a 9 x 13 pan, and line with parchment paper leaving an overhang on the short ends
In a mixer, beat butter and bananas together 2 minutes.
Add both sugars and vanilla, and mix together until creamy
Add eggs one at a time until just combined
Whisk together the flour, baking soda, baking powder and salt.  Add to the wet mixture and mix lightly until you have a smooth batter.

Pour batter into prepared pan, and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean, let cool completely, then lift our of pan with parchment paper.  Frost, and cut into individual servings, if desired.

Frosting:

2 1/2 cups powdered sugar
8 oz cream cheese softened
1 stick unsalted butter
1 tsp maple extract

Melt butter in saucepan and heat until foaming and slightly brown, and smells nutty.  set aside to cool.
Beat cream cheese ad cooled butter together until completely smooth, add maple extract.
Slowly add powdered sugar and beat thoroughly until light and fluffy.  Frost cake and serve!
