Famous Department Store Blueberry Muffins



This is a recipe from King Arthur Flour that is "fool proof" and delicious.  Add this to your repertoire
for fast Sunday morning muffins.  They will be in the oven in 20 minutes!


1/2 cup unsalted butter at room temperature
1 cup sugar
2 large eggs
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
2 cups King Arthur Unbleached All-purpose flour
1/2 cup milk (I used 2%)
2 1/2 cups fresh blueberries
1/2 cup sugar for topping

Directions:

1 Preheat oven to 375 degrees.  Line muffin tin with papers, and spray with no-stick baking spray,          such as Bakers Joy.

2.  In a medium bowl, beat together the butter and sugar until well combined.

3.  Add the eggs one at a time, scraping the sides and bottom of the bowl and beating well after each       addition.

4.  Beat in the baking powder, salt, and vanilla

5.  Add the flour alternately with the milk, beating gently just to combine.
     Scrape the bottom and sides of the bowl.

6.  Mash 1/2 cup of the blueberries.  Add the mashed and whole berries to the batter, stirring just to         combine. and distribute evenly.

7.  Scoop the batter with an ice cream scooper into the prepared pan.  Sprinkle each muffin with 1 tsp       granulated sugar.

8.   Bake the muffins for 30 minutes, until they are light golden brown, and a toothpick inserted into          the center of one of the muffins comes out clean.

Note:  Be sure that your baking powder is fresh, and your butter is soft.
           Mix this recipe by hand, the end result will be a soft, fluffy and delicious product.
