Sicilian Orange Cake / All credit due to Food and Wine Magazine


 This cake is very easy and so delicious!!

Ingredients:

2 cups all-purpose flour

1 1/2 tbsp baking powder

2 tbsp grated fresh orange zest

1 1/2 cups sugar

1/2 cup vegetable oil

3 large eggs

1 1/4 cups fresh orange juice

Directions:

Preheat oven to 350, and grease a tube or bundt pan very well.

Stir together flour, baking powder and orange zest, and set aside.

Beat sugar, oil and eggs for about 1 minute and 30 seconds until pale.  Add orange juice, and beat for 30 seconds.  On low speed, add flour mixture gradually, and beat until just combined, no more than 1 minute.  Do not overmix.

Transfer batter to pan and bake for 40-45 minutes.  Let cool 10 minutes in pan, and then turn out onto a wire rack and cool completely.

Optionally, you can add a glaze to the top by mixing confectioners sugar with just enough orange juice to make a pourable consistency.
