Veggie Dip Duo


 

Ginger Dip

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 1 inch pieces crystalized ginger
  • 1/2 can chopped water chestnuts (about 1/4 cup)
  • 1 tsp onion powder
  • 2 scallions
  • 2 tsp soy sauce
  • 1 clove garlic
  • 1/2 tsp cilantro

Place all ingredients into food processor and process until fairly smooth.  Stir in an additional tbsp chopped water chestnuts, add salt to taste.

Roasted Beet Hummus

  • 2-3 beets, roasted in the oven until tender
  • 1 can chick peas
  • 2 tbsp tahini paste
  • Juice of 1/2 lemon
  • 1 garlic clove
  • 1/4 cup olive oil
  • salt and pepper to taste

Place all ingredients into food processor and process to a smooth paste.
