 Taco Soup



Ingredients:
1 Lb. ground beef
1 medium onion, chopped
3 cloves garlic, smashed and chopped
1 jalapeno, seeded and chopped
2 cans Trader Joe's fire roasted tomatoes with chilies
32 oz. low sodium beef stock
1 tbsp chili powder
1 tsp. cumin
1 tsp. paprika
1/4 tsp. dried oregano
Fresh cilantro, chopped (about 1/4 cup)
1 tsp. Trader Joe's ranch seasoning
Kosher salt
Freshly ground black pepper
1 can black beans or red kidney beans
1 cup frozen corn
1/4 cup fresh cilantro, chopped 
To serve:
Limes
shredded cheddar cheese
Avocado
Sour cream
Flour tortillas, cut into strips and baked at 350 until crispy

Directions:
Add 2 tbsp. olive oil to a large pot.  Sauté onions and ground beef until onions are tender.  Drain off excess fat if necessary.  Add Jalapeno and garlic and sauté 2 minutes until fragrant.
Add tomatoes, beef stock, chili powder, cumin, oregano, paprika, ranch seasoning, salt and pepper and simmer for 30 minutes.  Add beans, cilantro and corn and cook until heated through.  Add more beef stock if you feel the soup is too thick.
Sprinkle additional cilantro on top
